ZWAVELZWAMMEN

Verschillende kranten en televisieprogramma’s hebben het reeds bericht: de paddenstoelen zijn uitzonderlijk vroeg dit jaar. Meestal verschijnen ze pas in de herfst maar dit jaar al begin augustus. Feit is echter dat paddenstoelen helemaal geen seizoenscyclus kennen. Ze ontkiemen simpelweg als de omstandigheden gunstig zijn. En dat waren ze want juli was in Nederland natter en koeler dan gemiddeld en in de eerste weken van augustus werd die lijn doorgetrokken. Ook in de Nieuwe Tuin zijn nu al verschillende paddenstoelen te zien. In de spleten van de oprijlaan groeit de blanke champignon parasol (Leugoagaricus leucothites). Ik denk dat veel mensen dat niet zal zijn opgevallen.

Echte blikvangers daarentegen zijn de goudgele zwavelzwammen (Laetiporus sulphureus) die op de rechtopstaande dode wilgenstam groeien. Die dode stam is daar op 4 juli geplaatst. Alle regen van de afgelopen maand heeft er tevens voor gezorgd dat aan deze dode stam weer enkele twijgen zijn ontsproten. In een oksel van de stam is ook een vlier op wonderbaarlijke wijze tot leven gekomen. En wat die zwavelzwammen betreft: die zijn mits niet al te oud heel goed eetbaar. De smaak maar vooral de draadjesachtige structuur doen denken aan kippenvlees. Veelzeggend is een populaire Engelse bijnaam van deze paddenstoel: ‘chicken-of-the-woods’ oftewel boskip. De blanke champignon paddenstoel is wat minder eetbaar en wel omdat deze soort bij sommige mensen maag- en darmklachten veroorzaakt.

CRABS-OF-THE-WOOD

Several newspapers and television programs have already reported it: mushrooms are exceptionally early this year. Whereas they usually appear in the fall, this year they could already be seen at the beginning of August. The fact is, however, that mushrooms have no seasonal cycle at all. They simply germinate when conditions are right. With July being wetter and cooler than average, growing conditions for mushrooms were perfect. The first weeks of August have not seen much change in these conditions. In the New Garden various mushroom species can be spotted. In the slots of the semi-open concrete driveway the white dapperling (Leugoagaricus leucothites) has appeared. I don’t think many people will have noticed this. Real eye-catchers, on the other hand, are the golden-yellow crabs-of-the-wood (Laetiporus sulphureus), growing on the upright standing dead trunk. That dead willow trunk was placed there on the 4th of July. The rains of the past month have also ensured that a few twigs have sprouted from this dead trunk, while in an armpit an elder has miraculously come to life. And by the way: crabs-of-the-wood are very edible, provided they are not too old. The taste, but especially the thread-like structure, are reminiscent of chicken meat. That is why this mushroom is also nicknamed chicken-of-the-woods. White dapperlings, on the contrary, are slightly poisonous. These mushrooms are causing gastric-upset in some people.
